CHEF KHALIL ALI
Chef Ali is the Chef Patron and Managing Director at Peche Patisserie and is known for his array of culinary delights including mouthwatering breads, pastries and desserts made using fresh, locally sourced ingredients. He is regarded as the foremost boulangier and pâtissier in Trinidad.
As a graduate of The Trinidad and Tobago Hospitality and Tourism Institute (TTHTI), he further pursued his education and attended the Culinary Arts School of Ontario, Le Cordon Bleu and The French Culinary Institute of New York – now called The International Culinary Centre of New York. At these institutions, he was trained under MOFs (Meilleurs Ouvriers de France).
He also has experience working in a number of reputable restaurants, hotels, bistros, patisseries and boulangeries in Ottawa, Toronto, New York and Holland – several of which are Michelin-star and Five Diamond establishments in North America. He was the executive pastry chef at a celebrity restaurant in Toronto and was an apprentice of David Carmichael and Chris Lee of Manhattan and Belgian and Alsatian chefs, Francois Rahier and Thierry Schmitt in Canada.
Chef Ali has catered to several high-profile clients including the President’s House, various foreign embassies and high commissions in Trinidad and in Canada. He has been featured in the New York Times and several local publications such as MACO, Caribbean Belle, Caribbean Beat and all major local newspapers. He has appeared several times on Business Line television segments as well as Eat Ah Food, Foodie Nation and Chef Chat online segments.
Established in 2009 as a bakery/restaurant, Peche Patisserie maintained distinction in offering the highest quality products and service to its customers; through its commitment to the use of fresh, seasonal ingredients as well as the fusion of creative, modern and traditional styles of baking and cooking. Peche Patisserie offered an Indo Franco Fusion product offering consisting of an array of culinary delights including mouthwatering dishes, bread, pastries, desserts as well as coffee, teas and local fresh juices. In October 2019, Chef Ali made the decision to expand the bakery to a commercial operation (Real Bread).
Established in 2019, Real Bread is a unique European product offering which was created locally. Real Bread is a commercial bakery offering a product offering of bread, pastries and desserts that are sold on a wholesale level to supermarkets, specialty pharmacies, gourmet and convenient shops as well as restaurants. Real Bread is all natural, crafted using sourdough and the highest quality of natural ingredients – containing no artificial preservatives which results in the most exquisite, heart healthy products which can be enjoyed through multiple uses inclusive of pastas, soups and sandwiches.
In January 2020 prior to the COVID-19 pandemic crisis Peche also switched from a dine-in restaurant to an Online Food/Bakery service which offered a variety of products via its website www.pechepatisserie.
Chef Ali also noted the growing uptick of at home food preparation and decided to capitalize on this by expanding his food service product offerings to include sauces that would compliment home made meals and help elevate them to restaurant quality.
